Chicken and Avocado Soup | Recipe | Turning the Clock Back (2024)

This chicken and avocado soup recipe is sponsored by Avocados from Mexico and The Motherhood but all opinions expressed are my own.

Have you ever gotten together with friends for a pot lock meal and been awed by someone else’s creation? Sometimes, I am amazed at the different types of recipes that people can come up with when given the same ingredients. One person may see peanut butter as a dessert ingredient while another might see it as part of a spicy dip for chicken. The possibilities are endless when it comes to creating new recipes out of a few basic foods. I was recently asked to get together with a few other Atlanta bloggers to see what we could create with avocados. And not just any avocados, either. Our food blogger mission was to create a cool recipe using Avocados from Mexico and then share the recipes with each other and with our readers.

Avocados are extremely versatile. They can be eaten alone or used in many different types of tasty recipes. Fresh avocados go great on sandwiches, toast or even as asubstitutefor higher calorie spreads to reduce your intake ofcalories fat, sodiumand cholesterol. Avocados contain what is called ‘good fats’….the monounsaturated andpolyunsaturatedfast that we are supposed to be eating. One ounce (3 slices) of an avocado has only 50 calories but contributes almost 20 different vitamins and miners to your diet. They have a wonderful flavor and an incredibly creamy texture which I absolutely love!

Avocados are really easy to prepare. You want to find one that is dark in color and firm but gives slightly when you press gently on it. Hold the avocado in the palm of your hand and gently slice all the way around the middle with a large knife. There will be a large pit in the middle so don’t try cutting all the way through! When the cut is made all the way around, twist the two halves in opposite directions and they will pop right apart! On one side you will see the large pit…use your knife to remove it. I sortof chop the sharp end of the knife right into the pit and then turn. It will come out easily! Scoop the soft center out of the avocado with a large spoon and then dice. Very easy!

For my recipe, I chose to combine a few of my favorite flavors from some classic Mexican dishes. I made this as a ‘top your own’ soup recipe to give my kids a chance to get creative and have some control over their meal. Top your own dishes are always a big hit in my house! I used fresh cilantro, chopped avocado, crushed tortilla chips and spoonfuls of fresh lime juice to create the finished product.

FAQs

Why do you put lemon juice in chicken soup? ›

An additional reason for elevating your chicken soup with lemon rather than other acidic ingredients is the health benefits. Lemons are high in vitamin C, help with digestion, and are full of antioxidants. Many soup recipes are made with good-for-you, healing ingredients and lemon fits right into that.

Can I put raw chicken in soup? ›

We first make the stock and later add the raw chicken meat to cook near the end of the soup-making process. You could also cook the breast and thigh chicken pieces whole, in the broth, and remove them after 15 minutes of cooking or so, cool them and shred them to be added at service.

Can you simmer chicken soup all night? ›

After simmering for about 2 hours, add the salt. Cover with a tight-fitting lid and cook for a total of 12 hours (either a whole waking day or overnight). Skim off the fat from the top occasionally, reserving that fat and broth with it in a bowl in the fridge.

Will avocado brown in soup? ›

Avocado soup's color can change as time passes because oxidation causes avocados to brown, but this does not affect the soup's flavor.

Why add vinegar to chicken soup? ›

Whether it's white wine or vinegar, a touch of acid added to the simmering pot will create a richer finished product. That's because acid helps break down the cartilage and other connective tissues in the bones of the chicken, which helps speed up the formation of gelatin in the stock.

How to make can chicken soup taste better? ›

Adding cooked chicken to your soup isn't the only way to bulk it up and improve the flavor. You can also try stirring in some other additions. A similar option is to mix in some extra vegetables. Remember, heating up canned soup means you don't cook the broth as long as you would if you were making it from scratch.

Is it better to cook chicken soup covered or uncovered? ›

Keep the soup at a steady simmer: Keep the pot partially covered and at a low simmer. You should see slow but steady bubbles and wisps of steam coming from the pot (although don't reduce the temperature so low that the water falls below 165°F or else the chicken won't cook through).

Is chicken soup really good for you? ›

All those bits of carrot, celery, and onion commonly found in chicken noodle soup are a great source of vitamins C and K, as well as other antioxidants and minerals. “Not only does this help build a healthy immune system to fight off viruses, it also helps your body recover from illness more quickly,” Allonen says.

What happens if you forget to put soup in the fridge overnight? ›

To be completely safe, you'll have to boil the soup vigorously for 10 minutes. Doing this will not only kill off any active bacteria, it will also inactivate -- but not destroy -- botulinum spores.

Can I eat chicken soup that was left out overnight? ›

That soup is not safe. Even if re-heated, many bacteria produce toxins that are not destroyed by heat. 80 degrees is the ideal environment for bacteria to thrive and multiply. One of the worst food-borne illnesses is Bacillus cereus.

Can you leave soup in a crockpot on warm overnight? ›

Don't leave it on 'warm' all day

Most appliances will automatically shut off after 20 or so hours on this setting, but you shouldn't leave food in a slow cooker for an extended length of time. The general rule of thumb is that 2-4 hours is the maximum length of time you can leave food in a slow cooker on warm.

Can I prepare avocado the night before? ›

Wondering can you make avocado toast the night before? Yes, squeeze lemon juice onto your mashed avocado & store in a ziplock bag then . . .

Why is my avocado soup bitter? ›

Avocados can taste bitter due to a few reasons, including being underripe, overripe, or exposed to low temperatures.

How do you cut an avocado for soup? ›

Once you've halved the avocado and removed the pit, use a paring knife to make slices, taking care not to go through the skin. Then use a soup spoon to carefully scoop out the slices.

What does adding lemon juice to chicken do? ›

Here's why: Lemon juice helps to tenderize meat, but when left for too long, it will break down the proteins too much, making the meat tough and rubbery… sometimes even mushy. So, if you want tender, juicy, and flavorful chicken, make sure to only marinate the chicken for 2-3 hours.

Why do people add lemon to chicken? ›

Many marinades use vinegar as an acid substitute but lemon juice is more effective as it lends a citric flavor. Depending on how tender you want the chicken to be, and how zingy you want it to be, use anywhere from 1 tablespoon to ¼ cup lemon juice for marinades.

What does washing chicken with lemon do? ›

The “internet wisdom” of rinsing a chicken with vinegar, lemon juice or salt water to kill germs has been debunked by scientific studies as well. These methods will apply a quick brine to the chicken, but they do not have any effect on bacteria.

Is lemon juice in soup good for you? ›

In addition to enhancing the flavor, lemon is a great source of the antioxidant vitamin C. Though Avgolemono is a Greek classic, similar dishes can be found throughout the Mediterranean. In addition to its comforting appeal, the soup is loved for its versatility.
